I’m all about some yummy comfort food and I feel strongly that if you’re vegan you should have the same access to amazing comfort food without the guilty conscious. So I’ve heard that today is national Kale day (Kale Yeahh!) and national Vegetarian day and I wanted to show both days some love while creating a slamming pizza. I’ve been experimenting with different pizza ideas and recipes since going vegan eight months ago and I feel strongly that I’ve perfected the process. Trust me, you NEED to make this pizza! My husband ate an entire pie Gangnam Style and he is my toughest food critic.

 

The key to making this pizza the bomb.com has to do with getting the crust crispy enough without all of the vegan cheese and toppings melting off the pizza giving it a naked pizza effect (scandalous!). Since some vegan cheese (vegan yogurt-based) have low melting points it is important not to bake them for too long. In addition, we do not want our veggies to bake too long in the oven as they begin to loose their nutritional value. However, this pizza is not considered raw because it is going to be baked over two-hundred degrees Fahrenheit.

 

So now that I bored you with my random vegan pizza problems, don’t just stand there let’s get down too it! First, buy a pizza crust! Unless you are a pizza god / goddess and can make your own crispy crust don’t feel bad about purchasing a store bought crust. My favorite brand is from Publix and is called Mamma Mary’s (see picture below).

Mama Mary sells Gluten-free crust, extra-thin, and regular for under or around $5.00. I’m pretty sure this brand is also sold at Wal-Mart, but then you’d have to sell you soul extra crispy once purchased. By the way, I’m officially calling this pizza the Kale-yeah Bacon Supreme because there is Kale and Bacon (tofurky) on this vegan masterpiece. Boom!

Ingredients:

 

1 chopped tomato (beefsteak “ohh yeahh” preferred)

2 cups of chopped Kale

1 Pizza Crust (preferable Mama Mary’s Gluten-free)

1 cup of Daiya Mozzarella cheese (pictured)

1 1/2 cups of Marinara Sauce

 

Procedure: Let’s get scientific here!

 

Step 1: Pre-heat the oven to 375 degrees Fahrenheit.

Step 2: Spray the pizza pan (you need a pan to hold the pizza otherwise disaster ensues) with oil. My favorite oil called Pompeian is 100% Avocado Oil a non-stick cooking spray which is also sold at Publix. See picture below:

Step 3: Unwrap the pizza crust and lightly spray the top of the crust with the avocado oil or olive oil. I personally like to use the avocado oil because it holds it’s nutritional value when heated unlike olive oil.

Step 4: Put the pizza crust with nothing on it except the oil in the oven for 10 minutes. This will give you the desired crispiness needed without damaging the vegetables and cheese under intense heat.

Step 5: Take the pizza crust out of the oven and pour about 1 1/2 cups of marinara sauce onto the crust. Try your best to pick a brand with the least amount of sugar grams. This is a little tricky so don’t be too hard on yourself. You can use different types of sauces, however, marinara works best for the Kale-yeah Bacon Supreme.

Step 6: Put one cup or one handful of Daiya mozzarella cheese (See picture below) onto the pizza. We’re going to use two types of vegan Mozzarella here so be sure to add only the type pictured first.

Step 7: Place small hand-ripped pieces of Tempeh Bacon also sold at Publix around the pizza spacing them out on top of the mozzarella.

Step 8: Place the two cups of chopped kale around the pizza so that most areas are covered.

Step 9: Sprinkle the sliced tomatoes on top of the chopped kale and garnish accordingly.

Step 10: Bake in the oven for 5 minutes

Step 11: Take the Pizza out and use the Go Veggie! Mozzarella cheese and sprinkle a cup of this on top of the pizza and put it in the oven for another three minutes.

Step 12: Take the pizza out, cut it and let it cool down before munching down.

Everyone needs a boost of energy nowadays especially in the morning before heading out to work a long day at the office. I don’t know about you, but breakfast has always been a bit of a struggle for me. I grew up eating everything my body couldn’t process such as whole milk, and lots of peanut butter and jelly sandwiches on white bread of course. Due to my food sensitivities, I hated breakfast because my stomach would churn in pain almost immediately after.

 

Now, after changing to a raw-vegan, I love breakfast and can’t skip the meal! For my first recipe post I figured I would share with you my absolute favorite breakfast smoothie that I am calling the “Un-mean Green” because all you’re going to kill in the morning are fruits and veggies! Ok so enough of that, here’s how you’re going to be a little nicer in the mornings:

 

-Chop up one Apple (any type)

-One Cup of Kale

-One Cup of Almond Milk or Coconut Milk

-Three pitted dates

-Two Tbsp. of chia seeds (or Goji Berries)

-Two Tbsp. of peanut butter (or roasted peanuts)

-One Tsp. of cinnamon sugar or powder

-One Tsp. of Maple Syrup or agave.

Blend all of these ingredients together in your blender. I use the Nutribullet, however you can use a Vitamix, Ninja, or regular blender to make this smoothie. Once the smoothie is significantly blended, pour yourself a glass and drink immediately. You do not want all of those good nutrients to go to waste so it is best to drink the mixture as soon as possible. If you would like to make more for a friend or loved one just double the recipe. I promise this is one of the greatest smoothie recipes of all time and it gives me tons of energy to start my day. No need for coffee even for you old Cortadito or Colada (Cuban espresso) lovers.
